When fall arrives, there’s an explosion of pumpkin-flavored everything – which I love. Then winter moves in, and a new flavor season comes along: peppermint season. I like peppermint, but when you mix it with chocolate I am in heaven.
When I bake, I need recipes that are easy. I prefer recipes that are simple to follow AND make me look like a rock star. I have no problem letting people think I slaved in a hot kitchen for hours to make the perfect holiday dessert. That’s why I fell in love with this yummy peppermint bars recipe. It’s super easy and super delicious.
1 package of family-size fudge brownie mix
2 1/2 cups powdered sugar
1/2 cup plus 7 tablespoons butter, divided
1 1/2 tablespoons heavy cream
1 teaspoon McCormick Pure Peppermint Extract
12 oz semi-sweet baking chocolate, coarsely chopped (I used a bag of semi-sweet chocolate chips)
(optional) Crushed Peppermint Candies
Directions ( I swear it’s easy!)
1. Pre-heat your oven to 350°. Prepare the brownies as directed on the package, and then spread in a greased, foil-lined 15 x 10 x 1 baking pan. (I wanted a thicker brownie bottom, so I used a 13 x 9 pan.)
2. Bake for 15 minutes or until a toothpick put in the center comes out almost clean. (Since I used a deeper pan, I baked for about 5 minutes longer.) Cool in pan on a wire rack.
3. While your brownies are cooling, beat the powdered sugar with 7 tablespoons of butter (melted), cream, and the McCormick Pure Peppermint Extract (the good stuff) in a large bowl with an electric mixer until it’s well-blended and smooth. Once your brownies have cooled, spread this mixture evenly over the top. Refrigerate for 30 minutes.
4. Microwave chocolate and 1/2 cup butter in a large bowl for 2 minutes or until the butter is melted. Stir until the chocolate is completely melted. Spread this mixture over the top of the chilled brownie, and then sprinkle with peppermint candies.
I wanted an honest review of this recipe, so instead of keeping it at home, I sent it with my husband to work. That way, if I messed it up, I could blame him. Thankfully, these peppermint bars got rave reviews:
